  7. 1/2 c Butter

  8. 5 Shallots, chopped

  9. 1 lg Onion, chopped

  10. 1/4 lb Chicken livers, chopped

  11. 1/2 c Pine nuts, toasted

  12. 1/4 c Sliver almonds, toasted

  13. 1 cl Garlic, minced

  14. 1/2 c Dry white wine combined with

  15. 1/4 c Chopped dried apricots and 1/4 c Raisins

  16. 1 Herbed Corn Bread (recipe),

  17. -crumbled

  18. 1 c Cooked rice

  19. 1 lb Can whole chestnuts, drained

  20. 1/4 c Honey

  21. 1 Tart apple, cored, chopped

  22. 1 t Ground ginger

  23. 1 t Dried basil

  24. 1/2 ts Allspice

  25. 1/2 ts Dried thyme

  26. 1/2 ts Dried oregano

  27. Salt and fresh ground pepper

  28. 1. Melt butter in large skillet over medium-high

  29. heat. Add shallot and onion and cook until soft. Add

  30. chicken livers, nuts and garlicand continue cooking,

  31. stirring constantly, until livers are just firm. Stir

  32. in wine-fruit mixtue and cook over high heat for 2

  33. minutes. 2. Turn into large mixing bowl and blend in

  34. remaining ingredients. Ahead: Stuffing can be prepared

  35. up to 3 days ahead. Cover and store in refrigerator,

  36. or freeze up to 1 month. Thaw completely in

  37. refrigerator before using. Leftover, cooked stuffing

  38. can be frozen. Makes enough stuffing for a 12-15 pound
