  1. 2 (1-pound) pork tenderloin, trimmed

  2. 1/2 cup lemon juice

  3. 1 teaspoon grated lemon zest

  4. 2 tablespoons olive oil

  5. 2 cloves garlic, minced

  6. 1 teaspoon salt

  7. 1/8 teaspoon white pepper

  8. 1-1/2 teaspoons dried thyme leaves

  1. Pierce the tenderloin all over with a fork and place in baking dish. Mix remaining ingredients and pour over pork. Cover and marinate in the refrigerator for 2-24 hours, turning pork once or twice. When ready to cook, preheat oven to 350 degrees F. Place meat on shallow baking pan, at least 2" apart. Roast for 40-45 minutes until pork registers 155 degrees F on a meat thermometer. Let stand 5 minutes, then slice to serve. Pork will be light pink in the center. Serves 6
