  1. 1 head romaine lettuce, washed and torn

  2. 1/4 cup finely chopped red onion

  3. 1 large ripe tomato, chopped

  4. 1/4 cup kalamata olives (or black olives)

  5. 1 cup crumbled feta cheese

  6. 1 tablespoon Dijon mustard

  7. 1/4 cup red wine vinegar

  8. 1/4 cup olive or canola oil (or a mixture of the 2) Coarse salt and freshly ground pepper to taste

  1. In a large bowl combine lettuce, onion, tomato, olives and feta cheese. Chill until ready to serve. In a small bowl, mix the mustard, vinegar, oil, salt and pepper with a whisk. Just before serving, drizzle over salad and toss to combine.
