  1. 1 5lb whole turkey breast

  2. 22 sage leaves

  3. 3 tbls butter cut into pieces

  4. 2 tbls olive oil

  5. 2 tsp salt

  6. 1 (14oz) can chicken broth

  7. 1 tsp mustard

  8. 2 tbls flour

  9. 1/4 cp water

  1. Heat oven to 350 degrees and place turkey in a roasting pan.

  2. Using your fingers seperate skin loosely from the meat.

  3. Distribute 15 sage leaves and butter under the skin.

  4. Rub skin with oil and sprinkle with salt.

  5. Roast 60 - 75 mins or until done.

  6. For gravy:

  7. Spoon 2 tbls of fat from the roasting pan into a small saucepan and add chicken broth, mustard and remaining sage.

  8. Simmer for 5 mins.

  9. In a small cup whisk together flour and water until smooth.

  10. Add flour mixture to pan, stirring constantly simmer for 5 mins until thick.

  11. Remove from heat and spoon over stuffing and turkey slices.
