  1. 2 cups shredded raw sweet potatoes

  2. 1 cup diced apples

  3. 1 tablespoon lemon juice

  4. 1/2 cup thinly sliced celery

  5. 1/2 cups raisins

  6. 1/3 cup sunflower seeds or toasted slivered almonds

  7. 2 tablespoons chopped parsley

  8. 1/3 cup reduced fat mayonnaise

  1. In bowl, toss sweet potatoes with ice water. Let stand several minutes; drain. In serving bowl, toss apples with lemon juice. Add sweet potatoes and remaining ingredients; blend well. Chill until ready to serve.
