  8. 2 cups water

  9. 3 1/2 pounds tomatillos -- husked and washed

  10. 2 large white onions -- thinly sliced

  11. 9 serrano chiles

  12. 9 cloves garlic

  13. 1 bunch cilantro -- leaves only

  14. 3/4 teaspoon salt

  15. 12 slices -- (1/4inch thick)

  16. -- oaxaca, mexican

  17. -- manchego,

  18. -- or asadero cheese

  19. -- (about 1 1/2 pounds)

  20. extra sprigs of cilantro -- for garnish

  21. 6 whole -- trimmed scallions,

  22. -- charred on a grill

  23. -- until marked, then

  24. -- sliced into 1/2 inch lengths

  25. 1 wedge toasted country bread -- for serving

  26. In a heavy saucepan, bring the water to a boil. Add the tomatillos, 3/4 of the

  27. 6 of the chiles, and 6 of the garlic cloves. Simmer the mixture

  28. covered for about 30 minutes, or until the tomatillos are tender. Cool slightly

  29. and transfer to a blender or food processor. Add the remaining onion, chiles,

  30. and garlic, cilantro, and salt. Puree the mixture. Preheat the oven to its

  31. lowest heat and heat a wellseasoned flat griddle pan or castiron skillet over

  32. medium heat. Brush each slice of cheese with a little oil, then grill the

  33. slices for about 20 seconds on each side. You will need a heavy metal spatula

  34. to turn them, scraping all the golden crust from the pan and flipping it over.

  35. You will have to grill the cheese in batches, transferring the cooked cheeses

  36. to a platter in the oven while you finish cooking, but do not let the cheese

  37. 2 slices of cheese on each of

  38. 6 warmed appetizer plates, pour the

  39. hot tomatillo sauce over the top and serve immediately, garnished with sprigs

  40. of cilantro and charred scallions. Accompany with wedges of toasted country

  41. bread.
