  1. 2 egg yolks

  2. Salt to taste

  3. 1-1/2 cups olive oil

  4. 1 tablespoon lemon juices

  1. Place egg yolks in a round-bottom bowl. Add salt. Beat until yolks are pale yellow. Very slowly beat in a few drops of oil. 

  2. Do not add oil too quickly or Mayonnaise will curdle. Add remaining oil very slowly, beating constantly.

  3. Beat in lemon juice. Taste and adjust for seasoning. Refrigerate. Makes 1-1/2 cups of Mayonnaise.
