  1. 2 tbsp olive oil

  2. 500 g ground caribou , or reindeer meat

  3. 125 g onions , chopped

  4. 750 ml caribou or beef stock

  5. 2 apples , peeled, cored and chopped

  6. 125 g pineapples , chopped, with juice

  7. 175 g raisins

  8. 175 g currants

  9. 1 large banana

  10. 1 bay leaf

  11. 50 g curry powder

  1. Method 1. Heat the olive oil in a large pot. Add the caribou meat and onion, and lightly fry until the meat is lightly browned.

  2. Pour in the stock and all of the remaining ingredients.

  3. Simmer with the pot uncovered, for 20-30 minutes until the liquid has reduced and the curry is thickened.

  4. Serve over rice.
