  1. 1 tablespoon olive oil

  2. 1 cup Clamato Tomato cocktail

  3. 1/4 cup beer

  4. 2 tablespoons ReaLemon juice

  5. 3 tablespoons jalapeo pepper sauce

  6. 3 tablespoons tomato paste (jitomate)

  7. 10 sprigs cilantro

  8. Salt and pepper to taste

  9. 1 lb. medium shrimp peeled, divined

  10. 1/2 lb. sea scallops

  11. 4 oz. crab meat

  12. Oil for frying (as needed)

  13. 2 packages (12 oz.) frozen tostones or 1 green plantain, prepared tostones style

  14. 1/2 medium green bell peppers, small diced

  15. 1/2 small red onion, small diced

  16. 2 packages (8 oz.) shredded Monterey Jack cheese

  1. Preheat oven to 350 F.

  2. Place all ingredients for marinade in a blender; puree until smooth.

  3. In a plastic bowl with cover, place marinade with shrimp and scallops (do not add crab meat).

  4. Cover and marinate for at least 30 minutes to an hour.

  5. In a frying pan on medium-high heat; heat oil, fry tostones.

  6. Remove shrimp and scallops from marinade.

  7. Place marinade in a small pot and bring to boil; cook 5 minutes.

  8. Place tostones on a baking sheet, top with shrimp, scallops, crab meat, peppers and onions; bake for 10-12 minutes.

  9. Top with cheese and bake 5 more minutes or until the cheese is melted.

  10. Serve on serving tray and drizzle marinade sauce over and serve.
