  1. 1/3 cup (80ml) lime juice

  2. cup (125ml) water

  3. cup (110g) caster sugar

  4. 1 tablespoon green ginger wine

  5. small (800g) rockmelon

  6. small (800g) honeydew melon

  7. small (1kg) watermelon

  8. medium (600g) pineapple

  9. 1 small (650g) red papaya

  10. 8 lychees or rambutans

  11. 2 large or 4 small passionfruit

  1. Combine the juice, water and sugar in a small saucepan. Stir over heat until sugar dissolves; bring to the boil then simmer, uncovered, for 5 minutes. Stir in the wine; cool.

  2. Chop the rockmelon, the honeydew melon and the watermelon coarsely. Slice the pineapple and red papaya thinly. Peel the lychees or rambutans.

  3. Combine this fruit with passionfruit in a large bowl then pour over the syrup and mix gently. Cover the fruit salad and refrigerate for 2 hours before serving.

  4. Not suitable to freeze. Not suitable to microwave.

  5. Cook's note Lime syrup can be made 3 days ahead; refrigerate.
