  1. 75g (3 oz) margarine

  2. 125g (5 oz) dark brown sugar

  3. 75g (3 oz) walnuts, finely chopped

  4. 75g (3 oz) self-raising flour

  5. 2 eggs, beaten

  6. 100g (4 oz) dates, chopped

  7. few drops vanilla extract

  1. Melt margarine and sugar in a pan over a low heat.

  2. Put all other ingredients into a bowl and add the melted margarine and sugar. Stir thoroughly and press into a greased swiss roll tin.

  3. Bake as you would for any other tray bake (180 C / Gas 4) for 30-40 minutes.
