  1. 200g eye fillet

  2. 200g of watermelon

  3. 100g of cucumber

  4. 6 semi-dried tomatoes

  5. 1 baby cos

  6. 1 tbsp of tomato paste

  7. 1 tsp of seeded mustard

  8. 1 tsp of honey

  9. Squeeze of lemon juice

  10. Splash of white wine vinegar

  11. Olive oil

  1. Fry beef cubes hot & fast.

  2. Mix together melon, cucumber, tomatoes and toss in olive oil.

  3. Place cos lettuce leaves in the bottom of a cocktail glass.

  4. Next layer is the watermelon mix and top off with hot beef cubes.

  5. Pour dressing over the top and serve as an entrée.
