  2. CRUNCHY MILLET BREAD

  6. 1 c Raw millet seeds

  7. 1 ea Package dry yeast

  8. 2 c Warm water

  9. 1/4 c Safflower oil

  10. 2 tb Molasses

  11. 4 c Whole-wheat flour

  12. 1 c Unbleached white flour

  13. 1 1/2 ts Salt

  14. 1/4 ts Ginger powder

  15. 1/4 ts Turmeric

  16. 2 tb Sunflower seeds, toasted

  17. 1/2 c Raisins -ÿÿapricots,

  18. 5 to 7 minutes.

  19. Combine yeast with 1/2 c warm water & let stand till it froths. Stir in

  20. remaining water, oil & molasses.

  21. In a large mixing bowl, combine flours, salt & spices. Make a well in the

  22. centre & pour in the wet mixture. Work into a dough & then add sunflower

  23. seeds & raisins or apricots if using. Knead dough for 10 minutes, adding

  24. more flour as needed. Cover & let rise until doubled in bulk.

  25. Punch down, divide dough into two parts & shape into loaves. Place in loaf

  26. pans & let rise till doubled in bulk. Score the tops, brush with warm

  27. 400F for 10 minutes. Reduce oven to

  28. 325F & bake for another 35 minutes. Cool on racks.
