  1. 2 pounds Shelburne Farms One Year Aged Cheddar, room temperature, cut in

  2. 8 (2-ounce) pieces

  3. 2 medium size apples

  4. 2 cups apple cider

  5. 1 tablespoon butter

  1. Peel, cut and core the apples into 8 even wedges.

  2. In a small saucepan simmer the apple cider. Reduce the volume of the liquid by two-thirds or until if forms a syrup. Stir in butter.

  3. Place 2 apple wedges on a small plate. Place piece of cheddar cheese over the apples and drizzle the warm syrup on top.
