  1. 2 1/2kg piece standing rib roast beef

  2. 2 tablespoons olive oil

  3. fresh rosemary and thyme leaves

  1. Preheat oven to moderate, 180 degrees celcius. Weigh beef and calculate cooking time (15-20 minutes per 500g).

  2. Rub olive oil over beef, sprinkle with herbs and season to taste.

  3. Place beef on a rack in a baking dish. Roast for 2 hours until cooked to taste. Rest, loosely covered with foil, for 15-20 minutes, before carving and serving with vegetables of choice and gravy (see next page).

  4. Top tips Add some red wine to the pan juices. Bring to the boil. Boil until reduced and thickened. Serve as a sauce over the beef.

  5. If liked, spread beef with mustard or horseradish before sprinkling with herbs and seasonings.
