  1. Chuck roast 4 Pound

  2. Onion 1 Large , chopped

  3. Garlic 2 Medium

  4. Carrot 1 Large , chopped

  5. Celery stalks 1

  6. Vegetable oil 2 Tablespoon

  7. Sugar 2 Teaspoon

  8. Thyme 1 Teaspoon

  9. Chicken broth 1 Can (10 oz) (1 Can)

  10. Beef broth 1 Can (10 oz)

  11. Potatoes 2 Pound , peeled and chopped

  12. Carrots 2 Pound , peeled and chopped

  13. Salt To Taste

  14. Pepper To Taste

  1. Directions GETTING READY 1. Preheat the oven to 300 degrees F.

  2. MAKING 2. Season roast with salt and pepper on both sides.

  3. To a very hot pot add oil, and sear roast on all sides.

  4. Once seared remove roast from pot and set aside.

  5. Add onion, garlic, carrot, celery, sugar, thyme, chicken broth and beef broth to the pot, stir to combine.

  6. Place roast back in pot, cover and cook in the preheated oven for 3.5 hours.

  7. Add potatoes and carrots to pot and cook for 1 hour.

  8. SERVING 8. Serve with rice or bread
