  1. Basic:

  2. 1, 15 oz can of chickpeas , rinsed and drained

  3. 1 fresh clove of garlic

  4. juice from a fresh lemon

  5. 1-2 tbs extra virgin olive oil

  6. 1/4 cup sesame tahini or as desired

  7. very hot water to thin mixture if needed

  8. salt and pepper to taste

  9. More olive oil for presentation

  10. Other Additions for variations: add as you prefer

  11. chopped roasted red bell peppers

  12. roasted garlic

  13. powdered cumin

  14. chopped cilantro

  15. pesto sauce

  16. hot sauce

  17. chipotle powder

  18. smoked paprika

  19. coconut oil or oriental sesame seed oil

  20. chopped jalapeno peppers

  21. chopped pitted olives

  22. Adjvar ( roasted eggplant with peppers )

  23. Or whatever you like

  1. For a basic hummus, into a power blender or processor place the lemon juice, olive oil, garlic , chickpeas, tahini and process until smooth and creamy Add hot water as needed to thin mixture Salt and pepper to taste If you want additions, stir them in now To serve: place prepared hummus on a plate or bowl, make a well in the center and pour in the olive oil in center Serve with fresh pita bread, chips, cut up veges etc.

  2. Note: basic recipe multiples well for larger crowds
