  1. 2 tablespoons butter

  2. cup brown sugar

  3. 3 large apples, peeled and sliced thinly

  4. cup slithered macadamia nuts

  5. BATTER

  6. cup softened butter

  7. cup castor sugar

  8. 1 egg, lightly beaten

  9. 1 cup golden syrup

  10. 2 1/2cups plain flour

  11. 1 teaspoon ground cinnamon

  12. teaspoon ground cloves

  13. 1 1/2teaspoon baking soda

  14. 1 teaspoon ginger

  15. 1 teaspoon salt

  16. 1 cup hot water

  1. Rub an 8 inch x 12 inch x 2 inch slice pan with butter, then sprinkle evenly with brown sugar. Arrange apple slices neatly over butter and sugar mixture. Sprinkle over nuts, then place into a preheated 180C oven whilst preparing the cake batter.

  2. For the batter, cream the butter and sugar using an electric beater until pale and creamy. Add the egg and golden syrup and mix well to combine. Sift over dry ingredients and fold through gently. Add the hot water and mix to form a runny batter.

  3. Remove pan from oven, and pour over the batter. Return to the oven and continue to cook for a further 35-40 minutes.

  4. Once cooked, allow to cool slightly and invert onto a cake cooling rack. Cut into fingers and dust with icing sugar before serving.
