  1. 1 Crisp coarsely-shredded lettuce

  2. 1 lb 454g / 16oz Fresh-cooked crab meat - well picked over

  3. (Dungeness, lump, or backfin)

  4. 4 Tomatoes - quartered

  5. 4 Hard-cooked eggs - peeled, quartered

  6. Dressing

  7. 1 cup 237ml Mayonnaise

  8. 1/3 cup 78ml Ketchup

  9. 1/4 cup 59ml Heavy cream - whipped

  10. 2 tablespoons 30ml Finely-grated scallions

  11. 2 tablespoons 30ml Minced parsley

  12. 2 tablespoons 30ml Minced green bell pepper

  13. 2 teaspoons 10ml Lemon juice

  14. 1 teaspoon 5ml Prepared horseradish

  15. 1 Salt

  1. On 4 luncheon-size plates, make beds of lettuce. Mound crab on top. Combine dressing ingredients and spoon over crab, then garnish each plate with tomatoes and hard-cooked eggs.
