  1. SEASON CHICKEN WITH SALT AND WHITE PEPPER BROWN CHICKEN IN A PRE-HEATED SAUTE PAN ON MED.-HI. HEAT WHEN CHICKEN IN BROWNED ON BOTH SIDES, PUT ON PLATE ADD 1 TBSP. OF BUTTER TO SAUTE PAN THEN ADD IN SHALOTTS AND GARLIC, SAUTE UNTIL TENDER PLACE CHICKEN BACK IN SAUTE PAN AND PUT IN 350 DEGREE PREHEATED OVEN FOR 25 TO 30 MINUTES OR UNTIL DONE WHEN CHICKEN IS DONE REMOVE CHICKEN TO A SERVING PLATTER PLACE SAUTE PAN ON STOVETOP ADD IN CHAMPAGNE TO DEGLAZE PAN THEN REDUCE BY HALF ADD IN HEAVY CREAM ALLOW TO REDUCE UNTIL SLIGHTLY THICKENED ADD THYME TO SAUCE AND SALT AND WHITE PEPPER POUR SAUCE OVER CHICKEN AND SERVE
