  1. 1 Tablespoon olive oil

  2. 12 eggs or egg substitutes, well beaten with

  3. 1/2 teaspoon salt

  4. 8 ounces Andouille sausage, chopped

  5. 1/4 onion, chopped

  6. 6 cloves caramelized garlic ñ see link

  7. 1 cup cooked cubed potato

  8. 1 red pepper, chopped

  1. Preheat oven to 400 degrees and 10 inch non-stick skillet to medium temperature. Spray the 10 inch non-stick skillet with cooking spray. Add olive oil, onion, garlic, red pepper and sausage. SautÈ for 2 minutes. Add potatoes and sautÈ for 2-3 minutes longer. Pour beaten eggs into pan and stir to mix. Lower the temperature. Cook 4-5 minutes allowing the eggs to set. Place in 350 degree oven for 5 more minutes or until eggs are completely cooked. Serve hot or at room temperature.
