: DOUGH: Stir the brown sugar into 1/2 c of the warm : water.
Dissolve the yeast in the water and sugar and set : aside for at least 5 minutes.
INto a large bowl, sift : together 4 c of the flour and the salt.
Make a : deepression in the middle of the flour and add 3 : T of the olive oil and the remaining 1 c of : warm water.
STir in yeast mixture.
Work the ingredients : into a dough with your hands.
Gather dough and place on a : floured board.
Knead for 10 minutes.
Place dough in a : clean bowl rubbed with some of the remaining 1 T : olive oil.
Moisten top of dough with oil as well.
Cover : with clean, damp cloth and put in a warm place to rise for : 1 1/2 hours.
: SAUCE: Heat oil in a heavy pan.
Add chopped onions and : garlic and cook over medium heat until transparent.
Add : tomatoes, chopping them up with a spoon.
Add basil, : oregano, salt, sugar, tomato paste and a few grindings of : black pepper.
Stir together and simmer for about 40 : minutes.
For a smooth sauce, run through blender or food : processor, in batches, carefully.
Cool.
To assemble pizza, : split dough in half.
Roll 1 portion into a circle large : enough to fit a 14 inch pizza pan, dough should overlap : sides.
Layer, beginning with the mozzarella cheese, : slightly less than 1/4 of the cheese; mushrooms and other : favorite ingredients.
Roll out second piece of dough to : form top crust.
Place over ingredients and pinch edges of : dough layers together.
Spread tomato sauce over entire : second layer.
Add remaining mozzarella, pepperoni and the : parmesan cheese.
Preheat oven to 500 degrees and bake on : middle rack for 25 minutes.
Allow to cool for a few : minutes before cutting.
