  1. -- DOUGH -- 1 ts Salt

  2. 1 1/2 ts Brown sugar

  3. 1 cn (6-oz) tomato paste

  4. Freshly ground black pepper

  7. 1/2 lb Parmesan grated cheese

  8. Sliced mushrooms

  9. Sausage; browned & cooked

  10. Sliced pepperoni

  12. 1 ts Dried oregano

  13. 1/2 ts Dried basil

  14. plum tomatoes

  15. 2 ts Brown sugar

  16. 1 1/2 c Warm water divided

  17. about 110 degrees

  18. 2 pk Instant dry yeast

  19. 4 1/2 c Flour divided

  20. 1 ts Salt

  21. 4 tb Olive oil

  22. SAUCE -- 2 tb Olive oil

  23. 1 c Chopped onion

  24. 1 Minced clove garlic

  25. 2 1/2 c (28-oz can) italian

  26. amounts desired

  1. : DOUGH: Stir the brown sugar into 1/2 c of the warm : water.

  2. Dissolve the yeast in the water and sugar and set : aside for at least 5 minutes.

  3. INto a large bowl, sift : together 4 c of the flour and the salt.

  4. Make a : deepression in the middle of the flour and add 3 : T of the olive oil and the remaining 1 c of : warm water.

  5. STir in yeast mixture.

  6. Work the ingredients : into a dough with your hands.

  7. Gather dough and place on a : floured board.

  8. Knead for 10 minutes.

  9. Place dough in a : clean bowl rubbed with some of the remaining 1 T : olive oil.

  10. Moisten top of dough with oil as well.

  11. Cover : with clean, damp cloth and put in a warm place to rise for : 1 1/2 hours.

  12. : SAUCE: Heat oil in a heavy pan.

  13. Add chopped onions and : garlic and cook over medium heat until transparent.

  14. Add : tomatoes, chopping them up with a spoon.

  15. Add basil, : oregano, salt, sugar, tomato paste and a few grindings of : black pepper.

  16. Stir together and simmer for about 40 : minutes.

  17. For a smooth sauce, run through blender or food : processor, in batches, carefully.

  18. Cool.

  19. To assemble pizza, : split dough in half.

  20. Roll 1 portion into a circle large : enough to fit a 14 inch pizza pan, dough should overlap : sides.

  21. Layer, beginning with the mozzarella cheese, : slightly less than 1/4 of the cheese; mushrooms and other : favorite ingredients.

  22. Roll out second piece of dough to : form top crust.

  23. Place over ingredients and pinch edges of : dough layers together.

  24. Spread tomato sauce over entire : second layer.

  25. Add remaining mozzarella, pepperoni and the : parmesan cheese.

  26. Preheat oven to 500 degrees and bake on : middle rack for 25 minutes.

  27. Allow to cool for a few : minutes before cutting.
