  1. 6 garlic cloves peeled

  2. teaspoon dijon mustard

  3. Pinch sugar

  4. salt and pepper

  5. 1 tablespoon tarragon vinegar

  6. 3 egg yolks

  7. 1 1/2 cups oil (i use half vegetable oil and half olive oil for mild flavour)

  8. 1 tablespoon of water

  1. Roast garlic cloves wrapped in foil for about half hour in hot oven, then finely dice. Put in medium sized bowl.

  2. Add mustard, sugar, salt and pepper, vinegar and egg yolks and whisk until creamy.

  3. Slowly drizzle in oil whilst continuously whisking.

  4. Whisk in water at end to thin a little if desired.
