  1. 500 gm mutton

  2. 1tsp cumin seeds

  3. 1tbsp coriander seeds

  4. 2 green chilies

  5. 2 red chilies

  6. Coriander leaves (few)

  7. Mint leaves (few)

  8. 1 cinnamon (stick)

  9. 1 cardamom

  10. 3 cloves

  11. 12black pepper (pods)

  12. 8 garlic flakes

  13. 1 pieces ginger (small)

  14. 1 egg

  15. 1 cup chana dal (soak in water for 1-2 hours)

  16. 2tsp lemon juice

  17. Salt as per taste

  18. 1 onion (chopped)

  19. 1/2tsp turmeric powder

  20. Oil for fry

  1. Pressure cooks the mutton along with water and 1/2tsp of salt till it become soft and tender (4-5 whistles)

  2. Make a fine paste with the cooked mutton (remove the bone)

  3. Now put cumin seeds, coriander seeds, green chilies, red chilies, coriander leaves, mint leaves, cinnamon, cardamom, cloves, black pepper pods, garlic and ginger in grinder

  4. Add egg and soaked chana dal

  5. Grind altogether very coarsely

  6. Take the paste in a bowl

  7. Add lemon juice, salt, chopped onion and turmeric powder

  8. Now add the mutton paste

  9. Mix altogether well to a dough

  10. Heating up oil on a tawa

  11. Put the mixture making small flat balls one by one on the tawa

  12. Fry them on medium flames

  13. Fry both sides of kebabs well

  14. Remove the kebabs on plate

  15. serve shami kebabs with roti or bread
