  1. 2 Small eggplants

  2. Salt

  3. 1 1/3 c All-purpose flour

  4. 1 ts Salt

  5. 1/4 ts Pepper

  6. 3/4 c Milk

  7. 2 Egg yolks, beaten

  8. 1 T Butter or margarine

  9. Vegetable oil

  1. Peel eggplant, and cut into 1/2- inch slices.

  2. Sprinkle each slice with salt.

  3. Let stand 30 minutes; rinse and drain well.

  4. Combine flour, salt, and pepper; add milk, egg yolks, and butter, mixing well.

  5. Dip eggplant slices into batter, and fry in hot oil (375F.

  6. ) until golden brown.

  7. Drain on paper towels, and serve immediately.
