  1. Chicken

  2. 2 tablespoons 30ml Olive or vegetable oil

  3. 1/2 teaspoon 2 1/2ml Salt

  4. 1/2 teaspoon 2 1/2ml Dried oregano

  5. 1/2 teaspoon 2 1/2ml Coarsely ground pepper

  6. 1/4 teaspoon 1 1/3ml Ground cumin

  7. 1 Frying chicken - cut in

  8. 8 pieces

  9. Black Beans

  10. 1 Black beans - (15 oz.)

  11. 1/2 cup 31g / 1.1oz Sliced green onions

  12. 1 tablespoon 15ml Chopped seeded jalapeno pepper

  13. 1 cup 146g / 5.1oz Monterey jack cheese - shredded

  1. Heat broiler. In small bowl stir together all chicken ingredients except chicken.

  2. Place chicken pieces on broiler pan; brush with half of oil mixture. Broil 4-6 inches from heat, turning once and basting with remaining oil mixture, until chicken is fork tender (25-30 minutes.)

  3. Meanwhile, place beans in 2 quart saucepan. Cook over medium heat, stirring occasionally, until heated through 5-7 minutes). Stir in green onion and jalapeno.

  4. Serve beans over chicken; sprinkle with cheese.

  5. NOTES : Serve with slices of avocado and tomato
