  1. Onion 2 Tablespoon , minced

  2. Celery 1/2 Cup (16 tbs) , minced

  3. Olive oil 2 Teaspoon

  4. 2 turnips and tops, bulbs minced and tops finely chopped

  5. 1/2 cup finely shredded cabbage

  6. 1/2 cup finely chopped beet greens or Swiss chard, stems and ribs removed

  7. Minced parsley 1/4 Cup (16 tbs)

  8. Salt 1/2 Teaspoon

  9. Black pepper 1/4 Teaspoon

  10. 5 cups brown veal or chicken stock

  11. Half and Half 2 Cup (16 tbs)

  12. Salt 1 To taste , minced

  13. 1 recipe Pesto

  14. Freshly grated Parmesan cheese

  1. Directions Saute onion and celery in oil until soft.

  2. Add vegetables, parsley, salt, pepper and stock.

  3. Cover, bring to boil, lower heat and simmer 20 minutes until vegetables are tender.

  4. Add cream, reheat and adjust seasonings with salt, pepper and oregano.

  5. Just before serving drizzle Pesto over top and pass Parmesan cheese.
