  1. 3 baguette-style frozen garlic bread loaves

  2. 6 to 8 salad tomatoes

  3. 10 to 12 cherry tomatoes

  4. 1 handful fresh basil

  5. olive oil

  6. salt and pepper

  7. 2 cloves garlic

  1. Preheat the oven to 180 C / Gas 4.

  2. Take out the frozen garlic bread and let it defrost until softened. It does not need to be completely defrosted, just enough to make it easy to work with.

  3. Chop the cherry and salad tomatoes into small pieces. Exact size is not important as long as they are not large bits. Put into a bowl.

  4. Tear or chop the basil into tiny bits and throw into the bowl with the tomatoes.

  5. Add a hefty drizzle of olive oil to the tomatoes and basil and then a pinch of salt and pepper.

  6. Crush the garlic cloves into the mixture, making sure the garlic is well crushed. Then stir and mix well the entire mixture making sure it is VERY well mixed in.

  7. Split the garlic bread losing the end bits (they won't sit on the tray properly) and make sure the garlic herb butter is spread across the slice rather than just a blob in the middle.

  8. Place each slice on a tray and spoon some of the mixture onto each slice.

  9. Bake in the preheated oven until the garlic bread is nicely browned, 8 to 10 minutes.
