  1. 115g butter, divided

  2. 90g sliced fresh mushrooms

  3. 170g diced onion

  4. 30g chopped fresh chives

  5. 1 clove garlic, chopped

  6. 240ml white wine

  7. 1kg diced new potatoes

  8. Salt and freshly ground black pepper

  9. 115g sour cream

  10. Small amount warmed whole milk

  1. Mashed potatoes with sauteed mushrooms 1) In a saucepan, melt 60g butter and saute mushrooms, onion, chives and garlic. Add wine and simmer for about 15 minutes.

  2. In a pot, boil potatoes until done; drain. Mash potatoes and add remaining butter, salt, pepper, sour cream, and warm milk to desired consistency. Combine all ingredients and whip until thick and creamy.

  3. Serve immediately.
