  1. 6 ounces lean ground beef

  2. 1/4 cup chopped onion

  3. 1/2 cup cooked, cubed yellow summer squash

  4. 1/2 cup coarsely chopped green pepper

  5. 1 cup cooked rice*

  6. 1 large egg

  7. 1 clove garlic, minced

  8. 1/2 teaspoon basil

  9. 1/2 teaspoon oregano leaves, crushed

  10. 1/8 teaspoon ground black pepper

  11. 1/4 cup (1 ounce) grated cheddar cheese

  1. Cook beef and onion in medium skillet until meat is no longer pink, stirring to crumble. Pour off fat.

  2. Add squash, green pepper, rice, egg, garlic, basil, oregano and black pepper.

  3. Spoon into 1-quart casserole. Sprinkle with cheese.

  4. Bake at 350°F (175°C) 25 minutes, or until heated through.
