  1. 1 tsp sesame oil

  2. 2 tbsp vegetable oil

  3. 1 x 200 g beef rump steaks , finely sliced

  4. 50 g ginger , shredded

  5. 1 small bunch coriander

  6. 50 g roasted peanuts , crushed

  7. 50 g bean sprouts

  8. 50 ml sweet chilli sauce

  9. 1 lime , juice

  10. steamed rice , to serve

  1. Heat the sesame oil and vegetable oil together in a wok over a high heat.

  2. Add the beef and cook for 2 minutes. Remove from the pan and add the peppers and ginger. Chop the stems and roots of the coriander, keeping the two separate. Add the roots to the wok and cook for1 minute.

  3. Stir in the peanuts, bean sprouts and chilli sauce. Return the beef to the pan and squeeze over the lime juice.

  4. Scatter with the chopped coriander leaves and serve straight away with steamed rice.
