  1. Crab Cakes 4

  2. 4 lb dungeoness crab meat

  3. 1 each eggs

  4. 1 tbsp fresh lemon peel

  5. 2 tbsp fresh basil

  6. 8 oz saltine crackers

  7. 1 cup mayonnaise

  8. 4 tbsp vegetable oil

  9. Sauce 3

  10. 3 each raw egg yolks

  11. 1 pinch black pepper

  12. 1/8 tsp old bay seasoning

  13. 3 oz fresh lime juice

  14. 2 tbsp fresh cilantro

  15. 1 pinch salt

  16. 1 3/4 cup vegetable oil

  1. In large mixing bowl, combine crab meat, whole egg, lemon zest, Old Bay Seasoning, chopped basil, crushed crackers, and mayonnaise. Mix thoroughly.

  2. Form crab meat mixture into 16 - 5 ounce patties. Cover and refrigerate 10 minutes.

  3. In skillet over medium, heat 4 tablespoons oil. Sauté crab cakes 4 minutes per side, or until golden brown.

  4. In blender, add egg yolks, Old Bay, lime juice, cilantro, salt, and pepper.

  5. Blend 10 seconds.

  6. With blender running, slowly add oil. Blend until sauce is creamy. Serve over crab cakes, or on side.
