  1. 1 tablespoon dill seeds

  2. 1 tablespoon fennel seeds

  3. 1 teaspoon dried oregano

  4. 1 teaspoon lemon pepper

  5. 1/4 teaspoon onion powder

  6. 1/4 teaspoon garlic granules

  7. 1.8kg boneless pork roast

  1. Preheat oven to 170 C / Gas 3.

  2. In a small bowl, combine the dill seeds, fennel seeds, oregano, lemon pepper, onion powder and garlic granules. Mix well and apply to the roast. Place roast in a 25x38cm or similar sized roasting tin.

  3. Bake at 170 C / Gas 3 for 1 to 1 1/2 hours or until internal pork temperature reaches 70 degrees C.
