  1. 1/2 c Sliced scallions

  2. 2 Garlic cloves; minced

  3. 1/2 ts Turmeric

  4. 2 tb Olive oil

  5. 3 c Coarsely grated carrots

  6. 1 Celery rib; grated

  7. 1/2 c Vegetable stock

  8. 1 ts Grated fresh gingerroot

  9. 1/2 ts Coriander powder

  10. 1/2 c Grated fresh coconut

  11. 1 1/4 c Frozen spinach

  12. thawed and drained

  1. Saute scallions, garlic and turmeric in oil until scallions are soft.

  2. Add remaining ingredients, simmer for 10 minutes and serve.
