  1. 1/2 lbs. fettucini noodles

  2. 1 lbs. crawfish or shrimp

  3. Sauce:

  4. 2 sticks butter

  5. 2 medium onions , chopped

  6. 2 bell peppers , chopped

  7. 2 cloves garlic , minced or pressed

  8. 1/4 cup flour

  9. 1/2 to 1 pt. half and half 1 tube garlic cheese

  10. Dash pepper sauce

  11. tony's to taste

  1. Saute onions, pepper and garlic in butter until soft. Stir in flour and begin gradually adding the milk, stirring well after each addition.

  2. Cut the garlic cheese into pieces and add to the sauce. Stir until well blended. Add a dash or pepper to sauce.

  3. Season the crawfish or shrimp, then add the crawfish to the sauce. Cook for 2 or 3 minutes. If sauce is too thick, add a little more cream.

  4. Fold noodles into crawfish or shrimp and sauce. Taste for seasoning. cook until heated through.

  5. Serves 4 to 6. Freezes well.
