  1. 1 to 1 1/2 pounds ground beef, no more than 85% lean

  2. salt and pepper

  3. 1/3 cup mayonnaise

  4. 2 whole chipotle chile peppers in adobo sauce, medium size, chopped

  5. 1 tablespoon fresh lime juice

  6. 2 medium cloves garlic, finely chopped

  7. 1 tablespoon finely chopped fresh cilantro, optional

  1. Shape burgers into 4 patties; sprinkle with salt and pepper.

  2. In a blender or bowl of an immersion blender, combine the mayonnaise, chopped chipotle chile peppers, lime juice, and garlic. Process until smooth and well blended. Or, finely chop the peppers and garlic and mix all ingredients together. Stir in cilantro, if using. Cover and refrigerate until serving time.

  3. Covered and stored in the refrigerator, the aioli will keep for up 2 to 3 days.

  4. Grill or broil the burgers, then arrange on split toasted or grilled buns. Top with the chipotle aioli and your favorite burger toppings.
