  1. 3 pounds chicken wings (about 15 wings)

  2. 2-1/2 Tablespoons vegetable oil

  3. 2-1/2 packed Tablespoons chopped cilantro

  4. 2 Tablespoons lime juice

  5. 2 Tablespoons tamari

  6. 3 (1/4-inch-thick) slices peeled ginger root

  7. 4 medium cloves garlic, peeled and smashed

  8. 2-1/4 teaspoons sugar

  9. 1-1/2 teaspoons ground cumin

  10. 1 small dry red chile pepper, crumbled, or to taste

  1. Cut each chicken wing at joints to make 3 pieces; discard tips. Combine vegetable oil, cilantro , lime juice, tamari, ginger , garlic , sugar, cumin, and chile pepper to make marinade . Place wings in a nonreactive dish large enough to hold them in 1 layer. Add marinade and turn to coat. Cover and refrigerate at least 2 hours or preferably overnight.

  2. Preheat gas or charcoal grill. Remove wing pieces from marinade and grill 8 to 9 minutes per side until dark brown.

  3. Yield: 30 pieces Per piece: 65 calories, 64 percent from fat, 5 grams total fat, 5 mg cholesterol, 1 g saturated fat, 5 g protein, .87 g carbohydrates, .08 g total fiber, 102 mg sodium.
