  1. 12 Prawns - cleaned, shelled (large) and deveined

  2. For The Marinade

  3. 4 tablespoons 60ml Olive oil - (60 ml)

  4. 3 tablespoons 45ml Lemon juice - (45 ml)

  5. 40 Fresh dill - chopped fine

  6. 1 tablespoon 15ml Garlic paste - (15 g)

  7. 2 teaspoons 10ml Ginger paste - (10 g)

  8. 1 teaspoon 5ml Soya sauce - (5 ml)

  9. Salt to taste

  10. For The Spicy Remoulade

  11. 2 tablespoons 30ml Mayonnaise - (30 ml)

  12. 2 teaspoons 10ml Finely chopped gherkins - (10 g)

  13. 1 teaspoon 5ml Finely chopped capers - (5 g)

  14. 1/4 Parsley - chopped fine

  15. 2 teaspoons 10ml Finely chopped spring onion - (10 g)

  16. 1/4 teaspoon 1 1/3ml Anchovy essence - (1 ml)

  1. MIX all the marinade ingredients well and apply the mixture to the prawns.

  2. Keep aside for 30 minutes.

  3. Heat the grill to medium high. Grease with a little olive oil. When the oil starts to sizzle, place the marinated prawns on the grill and grill for two minutes on each side or till done.

  4. Add the gherkins, capers, parsley, spring onions and anchovy essence to the mayonnaise and mix well.

  5. Serve the grilled prawns with the remoulade.
