  1. Mix the pumpkin with the egg yolks. Add the wine, sugar,baking powder,flour and lemon zest. Beat the egg whites to stiff peaks. Slowly add the egg whites to the pumpkin mixture. Warm the deep fryer to its maximum temperature. With a large spoon drop the pumpkin mixture into the deep fryer spoon by spoon and make sure they do not tough each other. When golden all around, remove them from the deep fryer and place on paper toweling to cool slightly.Sprinkle cinnamon sugar mixture over them and place in a deep glass container. Keep frying until all nuggets are made.
