  1. 2 large bananas

  2. 1 cup coconut milk

  3. 2 tablespoons granulated sugar

  4. 1/4 teaspoon ground cinnamon

  1. Peel the bananas and cut into bite-sized pieces.

  2. In a medium saucepan, bring the coconut milk to a boil. Add the sugar and cinnamon, stirring to dissolve.

  3. Add the bananas.

  4. Bring back to a boil, then turn down the heat and simmer for 3 - 5 minutes, until the bananas are tender but not mushy.

  5. Serve hot, sprinkling extra cinnamon on top if desired.
