  1. 8-10 sheets of lasagna

  2. 1/2 lb. scallops -- USA wild

  3. 1/2 lb. fresh uncooked shrimp--USA wild-- peeled deveined, Save the shells for fish stock

  4. 8 oz. crab

  5. 6 oz can of skinless boneless salmon drained (you can use fresh cooked)

  6. wine SAUCE

  7. 8 oz. fresh mushrooms sliced

  8. 1 minced carrot

  9. 1 minced stalk of celery

  10. 1 sm. diced onion

  11. 2 Tbs. unsalted butter

  12. 1 tsp. thyme

  13. 2 Tbs. fresh chopped parsley

  14. 2 Tbs. fresh chopped dill

  15. 3/4 cup of a good dry white wine

  16. fish stock

  17. 2 cups water

  18. shrimp shells

  19. 1 1/2 tsp Old Bay Seasoning

  20. 1 tsp. celery seeds

  21. 1 tsp. fennel seeds

  22. cheese BLEND

  23. 1 cup cottage cheese or ricotta

  24. 3/4 cup goat cheese with basil and roasted garlic

  25. 1 egg beaten

  26. CREAM SAUCE

  27. 1 cup of half & half

  28. 1/2 parmesan cheese

  29. 2 Tbswondra or flour mixed with cold half & half

  30. 1 Tbs. fresh lemon juice

  31. Kosher salt and white pepper to taste

  32. 2 cups of mozzarella cheese for topping

  1. Clean shrimp slice lengthwise and refrigerate In a small pot put shrimp shells, water, old bay seasoning, celery deed. and fennel. Cook till shells turn pink and liquid reduces to 1 1/2 cup. Strain thru coffee filter to remove solids.

  2. Prepare lasagna noodles according to pkg. directions.

  3. In a large pan melt butter add carrots, celery,onion, mushrooms and cook for about 15 minutes.

  4. Add thyme, parsley, dill, and wine. continue cooking until liquid is almost gone.

  5. Continue to cook Add liquid from stock , flour, half & half, Parmesan cheese, lemon juice, salt and pepper.

  6. When thoroughly mixed add all seafood, Take off heat In a separate bowl mix goat cheese, cottage cheese and egg.

  7. Preheat Oven 375 F Spray a 9x12 baking dish Spread 1/2 cup of sauce over bottom of baking dish Line lasagna noodles over sauce Spread 1/3 of sauce over noodles, and dolp with 1/2 of cheese mixture.

  8. Repeat on second layer of noodles.

  9. On third layer of noodles top with remaining sauce and mozzarella cheese Bake 375 F for 40 min or until top is golden brown.
