  1. 0 3/4 0 3/4 lb pork tenderloin

  2. 0 1/4 tsp salt

  3. 0 1/4 tsp black pepper

  4. 8 cup Lettuce, crisphead, fresh, shredded

  5. 1 each large yellow bell pepppers

  6. 0 1/2 lb fresh mushroom slices

  7. 16 oz Peas, black eyed peas, pre-soaked

  8. 0 1/2 cup fat free sour cream

  9. 0 1/4 cup fresh cilantro

  10. 2 tbsp fresh lime juice

  11. 2 tbsp vegetable oil

  1. Heat oven to 350 degrees.

  2. In a shallow roasting pan, place pork on rack. Sprinkle with salt and pepper. Insert meat thermometer so tip is in thickest part of pork.

  3. Bake uncovered 30 to 40 minutes or until thermometer reads 160 degrees and pork is slightly pink in center.

  4. Make Creamy Lime Dressing by mixing sour cream or yogurt, cilantro, lime juice, and oil.

  5. Cool pork and cut into slices.

  6. On a large serving plate, arrange salad greens, bell pepper, mushrooms and peas. Top with pork. Serve with Creamy Lime Dressing.
