  1. 1 head cauliflower florets

  2. 4 each potatoes

  3. 1/4 cups vegetable oil

  4. 1 teaspoon cumin seeds

  5. 1 inch ginger fresh, minced

  6. 3 cloves garlic

  7. 3/4 teaspoons turmeric

  8. 1 teaspoon red pepper flakes

  9. 3 each tomatoes

  10. 1 teaspoon garam masala

  11. 2 teaspoons coriander ground

  1. Cut cauliflower into flowerets. Cube potatoes. Heat oil and sauté cumin seeds for about a minute.

  2. Add garlic and ginger, stir and add potatoes.

  3. Bhoona, add turmeric and chili powder, and bhoona again.

  4. Add tomatoes and simmer for about 5 minutes. Add cauliflower and high heat for about a minutes.

  5. Lower heat, cover and let simmer for about 15 minutes.

  6. Curry should be damp-dry.
