  1. Carmelized Onions:

  2. 1 Medium onion Julienned

  3. 1 tbs. olive oil

  4. 1 tsp salt

  5. 1/2 tsp black pepper

  6. 1/4 cup balsamic vinegar

  7. garlic basil Aiolo:

  8. 1/2 cup mayo

  9. 2-3 leaves of fresh basil chiffonade (Julienned thin)

  10. 1 Tbs. roasted garlic

  11. 1 tsp of fresh lemon juice

  12. 1/4 tsp salt

  13. Pinch of black pepper

  14. Sandwich:

  15. 4 slices of Panini bread

  16. 8-10 oz. Deli Sliced Thin roast beef

  17. 1/4 cup Crumbled gorgonzola

  18. Spring Mix

  19. 8-10 oz deli sliced thin roast beef

  1. Heat olive oil in pan add onion salt and pepper and sautee till translucent. Add balsamic vinegar and reduce till vinegar is absorbed in onion. Chill.

  2. Mix all ingredients for garlic basil aioli, chill.

  3. When ready Heat panini press or skillet.

  4. Brush olive oil of toasted side of panini bread.

  5. Start building sandwich. One piece of bread on bottom, then roast beef. carmelized onion, gorgonzola, Garlic basil aioli on 2nd piece of bread place on top on gorgonzola. Brush top side of bread with olive oil. Place in press or in skillet toast both sides of bread. Add lettuce if desired.
