  1. 3/4 lb 340g / 11oz Fresh ginger - minced

  2. 6 cups 1188g / 41oz Granulated sugar

  3. 3 cups 711ml Cider vinegar

  4. 6 Garlic - mashed

  5. 8 lbs 3632g / 128oz Nectarines - (about 24 medium), pitted and cubed

  6. 2 Onions - chopped (medium)

  7. 1 1/2 cups 355ml Lemon juice

  8. 1 cup 160g / 5.6oz Golden raisins

  9. 1 cup 160g / 5.6oz Raisins

  1. Cover ginger with water in a saucepan and bring to a boil, turn down heat and simmer until tender, 35-40 minutes. In a large non-aluminum pot, mix ginger water, ginger, sugar, vinegar, and garlic. Bring to a boil and add remaining ingredients. Cook until thick, about 1 1/2 hours.
