  1. 4 tablespoons vegetable oil peanut

  2. 3 each garlic cloves

  3. 1 each green bell pepper

  4. 3 each jalapeno peppers or other spicy pepper such as banana peppers or thai chilies if you can find them

  5. 1 pound beef steak

  6. 2 tablespoons fish sauce Thai, optional

  7. 1 tablespoon soy sauce

  8. 1 teaspoon sugar

  9. 1/4 teaspoon white pepper ground

  10. 1/2 cup basil fresh, chopped, Thai or purple basil if possible*

  1. Prep:

  2. Peel and finely chop your garlic.

  3. Seed the peppers and remove the membrane (the membrane contains little flavor and too much moisture) and cut into fine slices.

  4. Pre-heat your wok or large skillet very hot.

  5. Cook in 10 minutes:

  6. Add the oil, allow to heat until shimmering.

  7. Add the garlic, stir (5 to 10 seconds) then add the peppers. Stir quickly and constantly for 2 to 3 minutes. Add the thinly sliced beef.

  8. Continue stir-frying for several minutes searing the beef strips to a medium-rare or your desired level of doneness. Too long and it will dry out.

  9. Turn off the burner on your stove.

  10. Add the soy sauce, fish sauce, sugar and white (or black) pepper.

  11. Toss together and then remove from heat.

  12. Serve immediately with rice or noodles (which of course you prepared ahead of time). Egg noodles work, rice or thin noodles would be more traditionally Thai.
