  1. 2 cups 474ml Mayonnaise

  2. 2 tablespoons 30ml Tomato sauce

  3. 1 1/2 lbs 681g / 24oz Lobster tail meat - roughly chopped

  4. 1 lb 454g / 16oz Onion - finely diced (medium)

  5. 2 Anchovy fillets - finely chopped

  6. 2 teaspoons 10ml Capers - finely chopped

  7. 2 Sweet gherkins - finely chopped

  8. 1 tablespoon 15ml Finely-chopped parsley - plus more to garnish

  9. 1 Hard-boiled egg - white finely chopped, yolk shaved with side of knife

  10. 1 teaspoon 5ml Worcestershire sauce

  11. Hot sauce - to taste

  12. 1 tablespoon 15ml Orange juice

  13. 1/2 Lemon - juiced

  14. Salt - to taste

  15. Freshly-ground black pepper - to taste

  16. 2 teaspoons 10ml Mustard

  17. 2 teaspoons 10ml Horseradish

  18. 1 teaspoon 5ml Paprika - plus more to garnish

  19. 1/2 teaspoon 2 1/2ml Cayenne

  20. 1 tablespoon 15ml Dry sherry

  21. 1 tablespoon 15ml Cognac

  22. 1 tablespoon 15ml Cointreau

  23. Lettuce - finely sliced

  24. 20 Shrimp - cooked, peeled

  25. Lemon wedges - to garnish

  1. Place mayonnaise in bowl on top of crushed ice. Add tomato sauce and 9 ounces lobster meat. In separate bowl, combine onion, anchovy, capers, gherkins, 1 tablespoon parsley, and egg white and yolk. Add this to lobster mayonnaise. Add Worcestershire sauce, several shakes hot sauce, orange juice, lemon juice, salt and pepper, mustard, horseradish, 1 teaspoon paprika, cayenne, sherry, cognac and Cointreau. Combine all ingredients carefully.

  2. Season lettuce with salt, pepper and lemon juice. Divide among 10 champagne glasses. Place remaining lobster on top of lettuce then cover with lobster mayonnaise. Garnish with 2 shrimp, parsley, paprika and a lemon wedge. Serve cold.
