  1. 500g minced beef

  2. 1 onion, finely diced

  3. 1 carrot, grated

  4. 1 egg, beaten

  5. 2 tablespoons fruit chutney, plus

  6. 1 tablespoon extra, for brushing

  7. 2 teaspoons Worcestershire sauce

  8. 1 teaspoon mixed dried herbs

  9. salad, to serve

  10. 3 potatoes, peeled, cut into chunks

  11. 2 tablespoons milk

  12. 20g butter

  1. Preheat oven to moderate, 180°C . Line a 10 x 20cm loaf pan with foil.

  2. In a large bowl, combine mince, onion, carrot, egg, chutney, sauce and herbs. Mix well and season to taste.

  3. Press mixture into pan. Bake 40 minutes. Drain excess cooking liquid from pan.

  4. TOPPING: Meanwhile, cook potatoes in a medium saucepan of boiling, salted water 10-15 minutes, until tender. Drain well. Mash with milk and butter. Season to taste.

  5. Preheat grill to hot. Brush meatloaf with extra chutney. Top with potato and fluff with a fork. Grill 10-12 minutes, until potato is crisp and golden. Serve in slices and accompany with salad, if liked.

  6. TOP TIP Add ½ cup leftover breadcrumbs or cooked rice to meatloaf mixture, to help absorb cooking juices.

  7. If your budget allows, sprinkle the potato topping with grated tasty or parmesan cheese.
