  1. 6 Tbsp. Butter

  2. 3 Tbsp. Flour

  3. 3/4 tsp. Salt

  4. Dash of Cayenne pepper

  5. 2 cups milk

  6. 1/2 cup heavy cream

  7. 3 egg yolks, slightly beaten

  8. 2 Tbsp. Tomato Paste

  9. 3 cans crabmeat or fresh

  1. Melt 3 Tbsp. Butter in a double boiler. Bled in flour, salt, cayenne pepper, and cook for 5 minutes. Remove from heat and slowly add milk, stirring until smooth. Replace top section, into the double broiler over the heat, cook 45 minutes. Stirring often. Combine heavy cream with beaten egg yolks and ½ cup of the white sauce you have made, mix well. Add to remaining sauce in the double boiler, stir and cook 2 more minutes. Add tomato paste and mix well. Melt remaining butter in a separate saucepan, add drained crabmeat or fresh to butter over low heat, cook 3 to 4 minutes. Add small amount of sherry & brandy at the last min. Stir meat & butter into sauce or pour sauce over meat, serve… may be placed on a bed of egg noodles or rice.
