  1. Cake

  2. 2 tablespoons 30ml Margarine

  3. 1 cup 198g / 7oz Sugar

  4. 1 Egg

  5. 2 cups 125g / 4.4oz White flour

  6. 2 1/2 Baking powder

  7. 1 cup 237ml Skim milk mixed

  8. 1 teaspoon 5ml Vanilla extract

  9. 6 Granny smith apples

  10. Topping

  11. 1/3 cup 53g / 1.9oz Brown sugar

  12. 1/2 teaspoon 2 1/2ml Cinnamon

  13. 1/4 teaspoon 1 1/3ml Freshly ground nutmeg

  14. 3 tablespoons 45ml Unsalted margarine

  15. Glaze

  16. 1/2 cup 118ml Apricot jam

  17. 1 teaspoon 5ml Lemon juice

  18. About 1 tsp water

  1. Method: Preheat oven to 350F. Spray a 9" x 12" baking dish with a nonstick spray Cream margarine with sugar.

  2. Mix the 1 tsp of vanilla into the milk.

  3. Beat in egg. Sift together dry ingredients. into egg mixture alternating with milk and vanilla.

  4. In food processor, pro egg with sugar until well mixed. Add margarine and process and then milk. dry ingredients into processor and pulse 3 or 4 times, just until mixed. (wash processor - reserve for next step.) Spread batter evenly into prepare dish.

  5. Top with fruit. Mix topping ingredients together in food processor or mixer. Dot over top of cake.

  6. Bake 30 to 40 minutes or until skewer comes out clean Cool completely.

  7. For glaze: heat together apricot jam, lemon juice and water. Strain into s saucepan or glass measuring jug. Heat on top of stove or in microwave until boiling and slightly reduced. If reduced too much, add a bit more water. onto completely cooled cake with pastry brush.

  8. Serve.
